NETTÔ “GYOKURO” and HATSUKARI PREPARATION
10 g tea / 120 ml water
Bring water to a boil, and let cool until approximately 185°F to 194°F (85°C-90°C). It is easiest to cool the water quickly by pouring into the cups to be used. Once the water is sufficiently cooled, pour it into a tea pot and infuse with tea for 45 seconds. Evenly pour little by little into each cup, until the last drop.
For the second infusion, we recommend a water temperature of 208°F (98°C).
For the third infusion, we recommend using 120 ml of water, near boiling point. Once the water is added to the tea pot, pour immediately into the cups and serve.
