Gyokuro is a premium Japanese green tea produced by shading the tea plants from sunlight approximately 20–30 days before harvest. This shading process suppresses the formation of catechins, which cause bitterness, resulting in a tea with rich umami and smooth flavor.
At Rishouen Tea Shop, we do not focus solely on strong umami. We also value the distinctive and refined aroma unique to gyokuro, known as “Ooika” (shaded tea aroma). For the first infusion, we recommend using 5g of tea leaves with 50–60 ml of water at around 40℃, and allowing the tea to extract slowly until the leaves open about halfway. For the second and later infusions, gradually increase the water temperature and enjoy the changing flavors.

Kabusecha is tea that is shaded for a shorter period than gyokuro but longer than sencha.The first infusion offers gyokuro-like umami, while the second and later infusions bring out the refreshing character similar to sencha, making it a tea that reveals different layers of flavor through multiple infusions.
